1 Vacation officially BOOKED...one cancelled... and 2 are in the works (=

We live with the motto - work hard play harder - And boy do we work hard. We both work fulltime jobs during the day and then our nights/weekends are consumed with working at the restaurant not to mention my own little wedding ventures into the wedding bussiness doing Wedding Planning and Custom Invitations - add that together puts us averaging around 115-120 working hrs/week - Some weeks can be down right exhausting! So yes, Mr. C and I like to vacation alot, as often as possible. At least 2 vacations a year with hopes for 3 (=

We originally booked our 1st vacation back in Sept 09' for Sept 10' and were planning on going back to Daytona, FL with the inlaws for 7days. Then my mom mentioned us doing a vacation with her during this summer so Mr. C and I decided to put a kabosh on the Daytona, FL trip and invite everyone to join us on a cruise in July. Now we're all up for vacationing with our families - we're both very close with them but we also want a vacation or 2 to ourselves so this is a perfect opportunity to kill 2 birds with one stone (sorta speak) and make this one big family vacation. We shall see how it turns out.

 I CAN NOT WAIT! We love cruising! Mr. C and I have both been to St. Thomas before but we hit bad weather on our last cruise so we're looking forward to going back and hopefully catching a gorgeous day! Mr. C has been to San Juan PR (he was actually stationed there for a number of months when he was in the Navy), I have never been so he's excited to show me around.  And this will be my 3rd time going to Bermuda which will be new for Mr. C so I'm really excited about going back and being able to share some of my favorite spots with him! It is by far my favorite island I've been to so far - I can't wait to bring him to horseshoe bay (one of my favorite beaches) and this awesome dive bar the 'Hog Penny'. Ahhh I wish I was there now! And finally Grand Turk - that is one island that is new to the both of us so I'm sure we'll book some sort of fun excursion for the day.

Soo 1 down 1/2 vacations to book. Right now we're also in the works of planning a vacation in May to Cancun, that will most likely be a 5 day vacation... and hopefully we'll rebook something for September (our anniversary) - I'm keeping my fingers crossed for Bahamas with hopes for 4-5days to either Sandals Royal Bahamian or there new resort Emerald Bay - looks GORGEOUS!

WW is my new love!!

I don't know why I waited so long to join?! I absolutely LOVE IT! And best of all  Mr. C loves it too. Granted he's not following it as strictly as I am, he's still eating out for lunch but I got him to start having a healthy breakfast at home every morning and he loves all of the new dinner recipes I've tried so far.....well all accept 1 - the WW baked ziti didn't go over so well. There's just some italian dishes that are meant to be left alone and baked ziti is definetly one of them LOL.

I seriously never thought 'diet' food could taste THIS good! I almost feel like I'm cheating while eating them and then I remember not only do they fit perfectly in my meal plan but their point values are so low I can litterly fill up as much as I want on them & have multiple servings if I'm still hungry!

Here are 3 of our favorites so far - DELISH! (not to mention really easy to make)

Balsamic Chicken with Mushrooms

Level of Difficulty: Easy


For a different flair, substitute dry white wine for the chicken broth, then sprinkle on a few spoonfuls of chopped sun-dried tomatoes with the mushrooms.

Ingredients
2 tsp vegetable oil
3 Tbsp balsamic vinegar
2 tsp Dijon mustard
1 large garlic clove(s), crushed
1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces
2 cup(s) mushroom(s), small, halved
1/3 cup(s) canned chicken broth
1/4 tsp dried thyme, crumbled
** I altered this dish a little - seeing I was pairing it with the creole stuffed mushrooms (recipe below) I removed the mushrooms (listed above) from it and instead topped the chicken with left over creole stuffing - soo good and it made it a  0pt topping**


Instructions
In a nonstick skillet, heat 1 teaspoon of oil.
In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.
Transfer chicken and marinade to skillet. Sauté chicken until cooked through, about 3 minutes on each side. Transfer chicken to a platter and keep warm.
Heat remaining teaspoon of oil in skillet. Sauté mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.
Serve chicken topped with mushrooms.

 
Creole-Style Stuffed Mushrooms

Serve these gorgeous stuffed mushrooms at your next party. They're an easy crowd-pleaser.




Ingredients
1 spray(s) olive oil cooking spray
1 pound(s) button mushrooms, about 24 large mushrooms
1 tsp olive oil
1/4 cup(s) onion(s), chopped
1/4 cup(s) sweet red pepper(s), chopped
10 oz chopped frozen spinach, thawed and drained
2 1/2 slice(s) whole-wheat bread, chopped into bread crumbs
1 tsp Creole seasoning, or Cajun seasoning
1/4 tsp ground turmeric

Instructions
Preheat oven to 350°F. Lightly coat a jelly roll pan with cooking spray.
Remove mushroom stems from caps and finely chop stems; reserve caps and set aside.
Heat oil in a large skillet over high heat. Sauté mushroom stems, onion, pepper and spinach until tender, about 5 minutes. Remove skillet from heat and stir in remaining ingredients until well-combined.
Stuff each mushroom cap with 2 tablespoons of filling mixture. Place mushrooms, stuffed sides up, on jellyroll pan. Bake, uncovered, 15 minutes; serve warm. Yields 2 mushrooms per serving. (Note: The mushrooms can be stuffed in advance, covered, refrigerated and then baked later in the day to save on last minute preparation time.)

 
Bacon and Swiss Quiche

Vary this simple recipe by using other types of cheese, or by adding diced, cooked vegetables and fresh herbs.



Ingredients
2 sheet(s) fillo (phyllo) dough, cut into three strips each
3 large egg(s)
1/4 cup(s) regular egg substitute
1 cup(s) fat-free evaporated milk
2 Tbsp all-purpose flour
1/4 tsp table salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/2 cup(s) low-fat hard cheese, Swiss, grated
4 oz cooked crisp turkey bacon, diced
** I altered my the recipe to include diced peppers and onions (0pts)**
Instructions
Preheat oven to 350ºF. Coat a 9-inch pie plate with cooking spray.
Lay fillo (phyllo) dough in pie plate, one piece at a time, coating each layer with cooking spray — dough should cover bottom and sides of dish. Fold in any overhanging corners.
Whisk together eggs, egg substitute, milk, flour, salt, pepper and nutmeg.
Sprinkle cheese and bacon over fillo (phyllo) dough. Pour in egg mixture and place quiche on a baking sheet. Bake until firm, about 30 to 35 minutes. Let cool at least 5 minutes before cutting into 8 wedges.

New year, new you ...

Or so the story goes. With ever new year we ring in it's always the same outlook (for the most part)  diet/exercise. BLAH!! Two things I now hate LOL. I don't know what happened to me that got me here - growing up until I was 22 I was always active, when I wasn't playing sports I was working out at the gym & not just your average 1hr workout. I was going everyday 2x's/day, 5 days/week anywhere from 2-2.5hrs a session. AND I was conscience about what I ate, I never limited what I ate - nothing was off limits but I was conscience about portion control.

Where did this person go?!?

3 years later and that person is no where to be found! I've done it I've become LAZY! Every morning I look in the mirror and hate the lack of motivation I have and what my lazy butt has turned into. My once flat stomach now has a baby pouch (minus the baby) and hello saddlebags - WTF friggin s-a-d-d-l-e-b-a-g-s!!! I walk and everything giggles - It's gross and it's time to put a stop to it!

I wasn't completely unaware of these past few years with my increasing weight gain and my new love of every food possible but I honestly did nothing to stop it - I'm going to chalk it up to settling down and getting comfortable with Mr. C.... this is what did he do to me! MEN - this is alll his fault - he stole my gym time and turned it into quality 'us' time. His love for italian not to mention is grandmothers cooking did this. Inlaws are evil I tell ya, LOL.

This week I decided it was time to take control of everything and say adios' to the crash diets I've become soo painstakingly used to these past few years. (Lately I have been reverting back to the same thing when I'm feeling unhappy about how I look/feel - liquid diet or fasting. Which works for all of 2 weeks and then everything comes right back). Instead this year I'm vowing to go back and do it the healthy way and take back control of what I put in my body - 2 days ago I signed up for Weight Watchers. So far so good! The point tracking is really easy and monitoring my intake during the day is a sinch... it's taking back control of my nighttime snacking that I know will make or break my commitment down the road - but this is a lifestyle change not just a fad diet and I have to keep my goal in mind... the end result -  4 seasons, 12 months, 365 day per year I want to be beach bod... better yet B-pic ready!

25lbs to go - let the countdown begin!

9 years in the making...

I don't think I can ever recall being this happy about a Dr. apt.
This morning I had my pre-op appointment with Dr. Restifo .. seriously I feel like I've waited forever for this day to come - this is 9 yrs in the making! I can remember wanting an augmentation from as young as 16 and when I first mentioned it to my parents they laughed it off ...'they'll come in give it time'..... 'don't be foolish you'll look fake'....  they'll grow... they'll grow... they'll grow... yada yada yada. That's all I kept hearing from everyone. I don't think anyone ever really took the time to understand where I was coming from.

They heard one thing and one thing only - fake boobs.
No one cared about how I felt, I just wanted to feel like a woman.

During most of the year I was somewhat comfortable in my clothes. I was armed with more padded bras than a girl should ever own but then the summer months came and the thought of putting on a bathingsuit made me want to cry... I couldn't hide in a bathing suit and padded pushups did nothing for me. I worried that everyone was looking at me and my boy chest. I was uncomforable in my own skin.  Then it came time for my wedding and dress shopping...

Getting fitted for my wedding dress was the breaking point, during the previous years I never 2nd guess having an augmentation it's always been something I wanted to do but I didn't forcefully persue it as much as I did when it came time for our wedding. Thankfully now I can look back at my wedding (specifically when I was getting dressed) and laugh. It was like I was padded with a suit of armor ::literally::
 LOL. I had double padded inserts sewn into my dress along with a padded pushup and lets not forget the cutlets - I was padded to the max.

::fastforward to now::
I've come to a point in my life where I can now say whatever to everyone. I don't care what everyone else has to say on the matter. I don't care if people want to look at my differently or call me 'fake'. For once I'm going to do exactly what I want. I've wanted this for so long, I've thought about it long and hard, weighed the pros and cons, I know the ins and outs of the surgery and this IS something I'm going to do && this is one thing I can proudly say I'm doing for me!

I'm so excited I CAN NOT wait! February 4th please hurry...

Happy New Year!

 The new year is finally here, the holidays have passed and now it's time to do the usually... make my to-do list for 2010. So here it is - my list of to-dos over the next 365 days:

1.   Read a minimum of 1 book per month
      (finished: 1/12/10 '3 Weeks to Say Goodbye' by CJ Box,)
2.   Indulge in a minimum of 1 full service spa day per season (1/30)
3.   Go back to church
4.   Lose 25lbs and get back to my pre-wedding weight
5.   Go hiking (regularly!)
6.   Knock down the wall between our living/dining room to open up the floor plan more
7.   Enjoy a weekend at Strawberry Park
8.   Do a bike ride for a charitable event
9.   Learn to ski
10. Get some of our wedding photos enlarged
11. Enjoy a day or two at the vineyard with friends
12. Go on 2 vacations - preferably 1 needing a passport (Booked a Cruise for July 2nd-11th to the Caribbean and Bermuda!)
13. Learn to scuba dive
14. Go golfing
15. Start looking into/purchasing properties - a local duplex and/or vacation property
16. Create living wills
17. Open a safety deposit box
18. Invest in a decent camera - nikon or cannon
19. Take Mr. C to a Jets game
20. Get my car professionally cleaned/detailed (and not by the carwash lol)... washed, waxed - the works
21. Finish house decor including curtains and blinds in ALL rooms
22. Enjoy a weekend at the cottage
23. Take a class on quickbooks
24. Take a photography class
25. Get my wedding bands polished
26. Plan a romantic weekend for Mr. C and myself including 1 night way, couples massage & dinner
27. Perfect my grandmothers perogi recipe down to a 'T'
28. Have at least 1 mommy, daughter, sister day per season
29. Host a girls day GTG at our house
30. Go with Mr. C fishing
31. Go through my closet and donate clothes to goodwill (not exactly Goodwill but donated my dresses to a HS with underprivileged girls so they can use them for prom)
